Ingredients
- 1 cup uncooked grits
- 2-3 cups Florida milk
- 2 cups water
- 2 Florida garlic cloves, minced
- 1/4 cup (1 stick) butter
- salt to taste
- freshly ground pepper to taste
- 1 pound Florida shrimp, peeled and deveined
- 3 Florida green onions, chopped
- 3/4 cup Florida grape tomatoes, halved
Preparation
- Bring milk, water and 1 garlic clove to a simmer in a heavy, nonstick saucepan.
- Add grits and cook as package directs, stirring constantly.
- Watch the evaporation of liquid and add more milk if necessary.
- When fully cooked, remove from heat and add 2 tablespoons of the butter and season with salt and pepper.
- Heat 4 tablespoons of the butter in a nonstick frying pan and add 2 green onions, 1 garlic clove, and the shrimp.
- Sauté the shrimp until the shrimp turns pink, 2-3 minutes.
- Add the rest of the butter to the pan and melt.
- Top the grits with the shrimp and pour the butter on top.
- Garnish with 1 green onion and the tomatoes.
