Ingredients
- 4 tablespoons butter
- 1 small onion, chopped small
- 1/2 red pepper, chopped small
- 1 teaspoon garlic, minced
- 1-2 jalapeno peppers, finely chopped
- 2 eggs
- 1 pound shrimp, pureed
- 3-4 cups breadcrumbs
- 1 papaya, peeled, seeded, chopped
- salt and pepper to taste
- 2 teaspoons lime juice
- 2 teaspoons Dijon mustard
- 1 tablespoon fresh cilantro or parsley, chopped
- 1/2 cup flour
Preparation
- Sauté onion, red pepper, garlic and jalapeno in 2 tablespoons of butter.
- Remove from heat and cool slightly.
- In a bowl, mix together eggs, onion mixture, shrimp and next six ingredients.
- Form mixture into patties, approximately 3 inches across and 1 inch thick.
- Put flour on plate and lightly coat patties with flour.
- Melt remaining 2 tablespoons butter in skillet and fry patties over medium heat 3-4 minutes on each side, or until golden and crispy.
- Serve hot.
