Ingredients
- 1/2 pound Florida rock shrimp, cooked, peeled and deveined
- 6 ounces soft cream cheese
- 1/2 cup Florida pecans, chopped
- 1/2 cup pineapple, crushed, drained
- 1/4 cup ripe olives, chopped
- 1 tablespoon Florida lime juice
- 6 slices white bread
- Butter
Preparation
- Chop rock shrimp.
- Combine all ingredients except bread and butter; mix well.
- Lightly butter bread.
- Spread equal amounts of shrimp mixture on 6 slices of white bread.
- Cover with remaining slices of wheat bread
- Cut each sandwich into 4 pieces diagonally.
