Rock Shrimp Dreams

Ingredients

  • 1/2 pound Florida rock shrimp, cooked, peeled and deveined
  • 6 ounces soft cream cheese
  • 1/2 cup Florida pecans, chopped
  • 1/2 cup pineapple, crushed, drained
  • 1/4 cup ripe olives, chopped
  • 1 tablespoon Florida lime juice
  • 6 slices white bread
  • Butter

Preparation

  1. Chop rock shrimp.
  2. Combine all ingredients except bread and butter; mix well.
  3. Lightly butter bread.
  4. Spread equal amounts of shrimp mixture on 6 slices of white bread.
  5. Cover with remaining slices of wheat bread
  6. Cut each sandwich into 4 pieces diagonally.
