- 1/2 teaspoon olive oil
- 1/4 cup red onion, thinly sliced
- 3 cups Florida fresh spinach, chopped
- 1/4 teaspoon dried oregano
- 1 cup (4 ounces) part-skim mozzarella shredded cheese
- 2 6-inch pita breads
- 2 Florida plum tomatoes, sliced
- 10 large Florida shrimp, cooked and peeled
Preparation
- Heat oil in small skillet over medium heat.
- Add onion and cook for one minute.
- Add spinach and oregano; cook one minute or until spinach is wilted.
- Sprinkle 1/4 cup cheese on each piece of pita bread.
- Top with spinach mixture, tomatoes, shrimp and remaining cheese.
- Place pitas on baking sheet; bake at 400 degrees F for 10 minutes or until cheese is melted.
