Shrimp and Spinach Pita Pizza

Ingredients

  • 1/2 teaspoon olive oil
  • 1/4 cup red onion, thinly sliced
  • 3 cups Florida fresh spinach, chopped
  • 1/4 teaspoon dried oregano
  • 1 cup (4 ounces) part-skim mozzarella shredded cheese
  • 2 6-inch pita breads
  • 2 Florida plum tomatoes, sliced
  • 10 large Florida shrimp, cooked and peeled

Preparation

  1. Heat oil in small skillet over medium heat.
  2. Add onion and cook for one minute.
  3. Add spinach and oregano; cook one minute or until spinach is wilted.
  4. Sprinkle 1/4 cup cheese on each piece of pita bread.
  5. Top with spinach mixture, tomatoes, shrimp and remaining cheese.
  6. Place pitas on baking sheet; bake at 400 degrees F for 10 minutes or until cheese is melted.
