Shrimp Fettuccine with Zucchini

IngredientsShrimp Fettuccine with Zucchini

  • 1 1/2 pounds Florida shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cups Florida zucchini, sliced
  • 2 cups Florida yellow squash, chopped
  • 4 cups cooked fettuccine
  • 2 tablespoons butter
  • 1 tablespoon dried oregano
  • 1/2 cup grated Parmesan cheese

Preparation

  1. In a large skillet, sauté shrimp in olive oil over medium high heat for 3 to 4 minutes on each side until opaque.
  2. Remove shrimp to a platter and keep warm.
  3. Add zucchini and yellow squash to the pan and sauté until tender and lightly browned.
  4. Add the shrimp, fettuccini, butter and oregano to the squash and mix well.
  5. Heat through.
  6. Add parmesan cheese and serve immediately.
