Shrimp Victoria

Ingredients

  • 1/4 cup Florida onion, finely chopped
  • 1/4 cup butter
  • 1 pound Florida shrimp, peeled and deveined
  • 1 6-ounce can sliced mushrooms, drained
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 cup sour cream
  • cooked rice

Preparation

  1. Place onion and butter in 1 1/2 quart microwave-safe dish.
  2. Arrange shrimp around the outside of the dish; place mushrooms in the center of dish.
  3. Sprinkle with flour, salt and pepper.
  4. Cover and cook in microwave on high for 4 minutes.
  5. Stir, replace cover and cook 2 minutes.
  6. Stir in sour cream.
  7. Cook 1 minute or until heated thoroughly. Do not allow mixture to boil.
  8. Serve over cooked rice.
