Salsa
- 4 cups Florida orange juice
- 4 green onions, sliced
- 6 key limes
- 1/4 cup honey
- 2 jalapeno peppers, sliced
- 1/2 cup kumquats, sliced
- pinch ground ginger
- 1 red bell pepper, sliced into strips
- 1 banana, sliced
- 1 mango
Preparation
- Heat orange juice and onions in skillet.
- Add juice of lime and honey.
- Add jalapeno, kumquats, ginger, and bell pepper and cook covered on low heat for 20 minutes.
- Remove lid and cook 20 minutes more until juice is reduced.
- Add the banana and mango and cook for 5 minutes.
Shrimp
- 3 pounds Florida shrimp
- spray olive oil
- 3 tablespoons lemon juice
Preparation
Peel shrimp. Baste with olive and lemon juice. Grill or sauté; shrimp. Serve shrimp on yellow rice, topped with 2 tablespoons of salsa.
Yield
8-10 servings
Note
Salsa can be prepared in advance and frozen
