Super Bowl Shrimp

Ingredients

  • 7 bacon slices
  • 2 medium Florida onions, diced
  • 1 large Florida green bell pepper, diced
  • 3 Florida jalapeno peppers, seeded and minced
  • 4 Florida garlic cloves minced
  • 7 cups Florida tomatoes, diced
  • 1/4 cup cocktail sauce
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 cups grits
  • 2 pounds peeled, deveined medium Florida shrimp

Preparation

  1. Cook bacon in a large skillet until crisp.
  2. Remove bacon and drain on paper towels; set aside.
  3. Reserve 3 tablespoons drippings in skillet.
  4. Sauté onion in hot drippings for 5 minutes.
  5. Stir in bell pepper, jalapenos and garlic; sauté 7 minutes or until tender.
  6. Stir in tomatoes, cocktail sauce, salt and pepper.
  7. Reduce heat and simmer for one hour, stirring occasionally.
  8. Cook grits according to package instructions; set aside.
  9. Stir shrimp into tomato mixture; cook 5 minutes.
  10. Serve shrimp over hot cooked grits and top with crumbled bacon.
