Ingredients
- 7 bacon slices
- 2 medium Florida onions, diced
- 1 large Florida green bell pepper, diced
- 3 Florida jalapeno peppers, seeded and minced
- 4 Florida garlic cloves minced
- 7 cups Florida tomatoes, diced
- 1/4 cup cocktail sauce
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 4 cups grits
- 2 pounds peeled, deveined medium Florida shrimp
Preparation
- Cook bacon in a large skillet until crisp.
- Remove bacon and drain on paper towels; set aside.
- Reserve 3 tablespoons drippings in skillet.
- Sauté onion in hot drippings for 5 minutes.
- Stir in bell pepper, jalapenos and garlic; sauté 7 minutes or until tender.
- Stir in tomatoes, cocktail sauce, salt and pepper.
- Reduce heat and simmer for one hour, stirring occasionally.
- Cook grits according to package instructions; set aside.
- Stir shrimp into tomato mixture; cook 5 minutes.
- Serve shrimp over hot cooked grits and top with crumbled bacon.
